The release candidate is basically Windows 7 ultimate, but it expires this coming summer. Would it be to my benefit to just do a clean install of my purchased copy of 7 Professional, or wait for the release candidate to expire?

Install professional now. Since the final version is out now, Microsoft has basically dropped support for the release candidate. This means that you might not get new security and stability fixes.

Definitely upgrade to the final version.

It already has months more polish under the hood, and it will be supported moving forward. The Release Candidate is now outdated and it's unsupported.

The only reason you might stay on the Ultimate RC is if you'd used something like BitLocker that you won't have access to with your new Professional version, and you need to shift things around appropriately first.

I am currently running 7 pro and it's excellent! I would have no concerns in upgrading to the final release version.
